Passover Recipes: Spinach Matzah Kugel

A dairy kugel that can be served on Passover.

My best friend, Wendy Vitale, serves this at the Passover seder we usually celebrate together. Perhaps she will make it this year again and we can watch her family savor it at what I expect to be our first fully-virtual seder.

5 pieces matzah soaked, drained and
crumbled
1 large onion, chopped
1 cup fresh mushrooms, optional
1 stick butter
1 package frozen chopped spinach,
cooked and drained
12 ounces sour cream
4 slices Muenster cheese
1 egg, beaten
Salt and pepper, to taste

Preheat oven to 350 F. Saute onions and mushrooms, if desired, in butter. Mix in matzah, spinach, sour cream and egg. Add salt and pepper to taste. Pour into greased dish. Mix in slices of cheese. Bake for 40 minutes or until kugel starts to slightly brown.
Salt and pepper, to taste.
