1 1/2 cups matzo meal
1/2 cup potato starch
1 1/2 tablespoon baking powder
1/2 cup white sugar
1/2 teaspoon salt
1/2 cup water
2 tablespoons oil
Whisk together matzo meal, potato starch, baking powder and salt in a mixing bowl.
In a separate bowl, mix eggs and water. Add to dry mixture and mix well.
Lightly coat a frying pan with oil. Lower heat to low.
Using a spoon or ladle, pour in the batter. Cook on one side until bubbles form. Flip and cook for about another minute.
If the batter begins to thicken, add a little water to thin out. Remove when done and repeat.
Add fruit, chocolate chips or syrup, if desired
